Our Crock Pot Pesto Egg Casserole is an easy low carb breakfast casserole with fluffy eggs, savory pesto, tomatoes, basil and mozzarella cheese.

INGREDIENTS
  • 10 eggs beaten
  • 1 1/4 cup heavy cream
  • 1 cup shredded mozzarella
  • 1 tbsp minced garlic
  • salt & pepper to taste
  • 1 cup grape tomatoes halved and salted
  • 8-10 basil leaves chopped
  • 8 oz fresh mozzarella cubed
  • 6 oz pesto


INSTRUCTIONS
  1. Mix eggs with cream, shredded mozzarella, garlic  and season with salt and pepper.
  2. Sprinkle tomatoes, basil and fresh mozzarella evenly over top.
  3. Cook on high for 1-3 or until the egg sets in center.
